  2. Add cottage cheese, eggs, and gelatin (if using) to a blender or food processor.
  3. Blend until completely smooth.
  4. Line a baking sheet with parchment paper (not wax paper).
  5. Pour the mixture onto the sheet and spread evenly into a thin rectangle or circle.
  6. Bake for 30–40 minutes, depending on thickness.
  7. Remove from oven and allow to cool fully before cutting or rolling.
