Back in the day (it was a Wednesday) I used to make this one comfort food dish called Poppyseed Chicken. It was a creamy, gooey, chicken-y goodness casserole topped with buttery crushed up crackers and sprinkled with- you guessed it- poppyseeds. These days I swap the crackers for pork panko and leave the seeds for the birds. I hope this dish feels like a warm, giant hug, unless you’re not a hugger…
Ingredients:
4 cups cooked chicken breast (2 pounds raw), finely chopped
1 cup cream cheese
1 cup sour cream
½ cup heavy cream
½ cup canned parmesan cheese
2 tablespoons butter, melted
¾ cup pork panko
- Preheat the oven to 375*F.
- Place the cream cheese, sour cream and heavy cream in a bowl. Mix well, add in chicken, stir and place the mixture in an 11 x 7 casserole dish.
- Put the panko and melted butter in a bowl and mix well. Add the parmesan and stir. Sprinkle the mixture on top of the casserole.
- Bake for 25-30 minutes until hot and bubbly.
Hi Courtney! Made this tonight and it is DELICIOUS! For your readers who only have a 9×13, I increased the pork panko to 1 cup, the Parmesan to 3/4 c and the butter to 3 tbls in order to cover the whole casserole. It covered it perfectly. I still cooked it for the same amount of time. Thank you for a wonderful recipe that I know we will continue to enjoy, especially when it’s not 100 degrees out! 😆
Thank you, Sherry! So happy you enjoyed it and appreciate the tip you left for the others 🙂
Thank you!! Going to make this tonight for my OMAD! 🙂
Hope you enjoy!
Oh my goodness! Poppyseed chicken has been a family favorite of ours for years! I have truly missed it since going keto six years ago! Thank you, thank you thank you for sharing this recipe… Tried it tonight, and it is absolutely amazing! Can’t wait for my husband to get home… He’s going to love it! 🥰
This was so good and the leftovers were just as yummy! I folded in some shredded cheddar to the chicken mixture for extra cheese with some seasoning and it was delicious!
This sounds yummy. I plan on making it soon.
Can’t wait to try this !! Sounds delicious!
Is canned parmesan the cheese in the shaker bottle?
yes, but it is much better for you to buy a small wedge and shred your own. i do it “fine shred” in my food processor and i freeze the rest. (yes you can freeze dairy n cheese…it just may change the texture on things like cream cheese n sour cream etc.).
I am putting this on the menu for this week! It sounds so yummy! Thank you, Courtney, for always being willing to share your recipes.
I wonder how it would taste over carnivore bread rolls?
Made this dish yesterday evening as part of a carnivore dinner party my wife and I had with another couple who recently became carnivores and everyone loved it! Very simple to make, and it was so delicious and creamy. This casserole will definitely be a regular dish in our household. Thanks, Courtney! Can’t wait to try more of the recipes in your upcoming cookbook!
