Back in the day (it was a Wednesday) I used to make this one comfort food dish called Poppyseed Chicken. It was a creamy, gooey, chicken-y goodness casserole topped with buttery crushed up crackers and sprinkled with- you guessed it- poppyseeds. These days I swap the crackers for pork panko and leave the seeds for the birds. I hope this dish feels like a warm, giant hug, unless you’re not a hugger…

Ingredients:

4 cups cooked chicken breast (2 pounds raw), finely chopped

1 cup cream cheese

1 cup sour cream

½ cup heavy cream

½ cup canned parmesan cheese

2 tablespoons butter, melted

¾ cup pork panko

  1. Preheat the oven to 375*F.
  2. Place the cream cheese, sour cream and heavy cream in a bowl. Mix well, add in chicken, stir and place the mixture in an 11 x 7 casserole dish.
  3. Put the panko and melted butter in a bowl and mix well. Add the parmesan and stir. Sprinkle the mixture on top of the casserole.
  4. Bake for 25-30 minutes until hot and bubbly.

Cheesy Chicken Casserole

  1. Hi Courtney! Made this tonight and it is DELICIOUS! For your readers who only have a 9×13, I increased the pork panko to 1 cup, the Parmesan to 3/4 c and the butter to 3 tbls in order to cover the whole casserole. It covered it perfectly. I still cooked it for the same amount of time. Thank you for a wonderful recipe that I know we will continue to enjoy, especially when it’s not 100 degrees out! 😆

    This was so good and the leftovers were just as yummy! I folded in some shredded cheddar to the chicken mixture for extra cheese with some seasoning and it was delicious!
