Yield: 6 Individual Cakes

Prep time: 10 minutes

Cook time: 15 minutes

1 cup milk powder

3 eggs

3 tablespoons Equip Foods vanilla collagen for some sweetness, or unflavored for stevia free

2 tablespoons melted butter

2 tablespoons heavy cream

  1. Mix all ingredients, excluding the milk powder. Once blended, add in the milk powder and slowly mix together.
  2. Pour into 6 muffin tin wells. I used the bake setting on my air fryer and baked at 350*F for about 15 minutes

*while the flavored collagen adds sweetness, the unflavored is still very delicious and you get a slight sweet flavor from the milk powder.

    I don’t have milk powder. Can I use regular milk and how much? I also want to make this as a bday cake for a friend. Can this be done?

      Hi Darlene!

      Regular milk won’t work the same here since the milk powder adds that creamy richness without extra liquid — using milk would make it too runny.

      🥰 I’d stick with the powder for this one (you can grab it on Amazon — it ships fast!) And yes, it’s perfect as a birthday cake! 🎂

    Hi Courtney, I’ve tried making these 2 times now and both times the bottoms cave in, mine do not look like yours. The only thing different is I’m using goat milk powder instead of regular milk powder. Could that be it? Was really hoping to make these for T Day. I even watched your video for making these.

      Hi Shannon!

      I haven’t tried goat milk powder yet, but different milk powders can definitely affect moisture and structure. Goat milk powder tends to be a bit drier and lower in fat, so that may be why the bottoms are collapsing, though I can’t say for sure since I haven’t tested it myself.

      A couple adjustments that might help:
      • Reduce the goat milk powder slightly
      • Add a small splash of extra liquid
      • Aim for a batter texture similar to what you see in the video before baking

      Results can vary, but those tweaks may get it closer!
