Ingredients
12 eggs
12 oz cream cheese
2 cup pork panko
1 stick butter
3 1/2 tablespoons pumpkin pie spice
1 tablespoon + 1 teaspoon vanilla extract
Instructions
Blend well and pour into a greased or parchment lined loaf pan. Bake at 375’F for 60 minutes or until a toothpick inserted comes clean. Slice and toast each slice before eating. Store in the fridge or slice and freeze.
Carnivore Pumpkin Spice Bread

Hello! I love baking so much, but after starting to eat more healthy (like a keto/carnivore) I’ve had to stop. But I wanna start again, I even used to have a baking business I had to stop, I miss it so badly
My mom and I have learned so much from watching your YouTube channel, and we saw your video for the pumpkin bread recipe. I want to try it, but I was wondering could I add some pure pumpkin puree in it? If so, how much would you do?

I haven’t tried it myself, but I would think swapping out either some or all of the cottage cheese for pumpkin would be a good start. You might have to play around with the texture a bit to get it just right, but it should add a nice flavor and color.

Is it cream cheese or cottage cheese for the main recipe? I saw in a comment (about adding pumpkin puree) that you said to replace some of the Cottage Cheese with the puree. I have your cookbook and the bread recipe in there calls for cottage cheese. Thanks!

Thanks for your question! The original version in the cookbook uses cottage cheese, while the pumpkin variation uses cream cheese. The good news is the recipe is very forgiving, and either cream cheese or cottage cheese works beautifully. 😊
