Ingredients
1 cup heavy cream powder (or milk powder)
2 tbsp monkfruit/allulose blend
1 egg
1 tsp gelatin
1/2 tsp vanilla extract
Instructions:
Mix all dry ingredients (cream powder, sweetener, gelatin). Add the egg + vanilla and mix until a thick dough forms. Scoop into 6 small mounds (instead of “blobs,” lol) onto a parchment-lined baking sheet. Bake at 350°F for about 15 minutes, or until lightly browned.

Im wondering if it could be possible to substitute liquid drops of monkfruit instead of the powdered allulose blend. It seems like it would change the cookies because of the wet to dry ratio. If I attempt this variation, I will let you know, but if you have any insight on substitutions, let me know! Thanks!
