This breakfast casserole is simple, filling, and one of those go-to recipes that just makes things easier. It’s made with basic ingredients, comes together quickly, and works for everything from holidays to everyday morning.

Ingredients
1–1.5 lbs ground meat (beef, sausage, or mix)
2½ teaspoons salt, divided
6–8 large eggs
4 oz cream cheese
½ cup sour cream


Instructions
Preheat oven to 350°F and prepare a casserole dish.

In a skillet over medium heat, cook the ground meat for about 15 minutes until browned. Season with 2 teaspoons of salt.

Drain all but 1 tablespoon of the fat, then transfer the meat and remaining fat to a large bowl and set aside to cool.

Put the eggs, cream cheese, sour cream, and remaining ½ teaspoon of salt in a blender and blend until smooth.

Pour the egg mixture into the bowl of meat and stir to combine. Then pour the mixture into the prepared casserole dish.

Bake until cooked through but still slightly jiggly in the center, about 45 minutes. Be careful not to overcook.

Slice and serve right away, or let cool slightly before serving.
